1. No-Bake Cheesecake

For a twist to your regular baked cheesecake recipe, this no-bake version is one you’d want to keep in your recipe book. Bring this to any party and it will surely be a hit! Simple and easy to make, let your taste buds go wild with the flavours from this winning recipe. P.S. Some even prefer this version to the baked cheesecake since it is a lot fluffier!

Preparation Time: 20 minutes

Ingredients:

Graham Cracker Crust

2 cups of graham cracker crumbs

1/3 cup of light or dark brown sugar

1/2 cup unsalted butter

Cheesecake Mixture

1 ¼ cup of heavy cream

680g of full-fat cream cheese softened

1/2 cup of granulated sugar

2 tablespoons of confectioners’ sugar

1/4 cup of sour cream, at room temperature

2 teaspoons of lemon juice

1 teaspoon of vanilla extract

Steps:

  1. Stir the graham cracker ingredients together until well combined.
  2. Place the graham cracker mixture onto a 9-inch or 10-inch springform pan.
  3. Press the graham cracker mixture to pack it into a crust.
  4. Pop it into the freezer for 10-15 minutes for the crust to set.
  5. To make the cheesecake filling, beat the cream cheese and granulated sugar till well combined.
  6. Add the confectioners’ sugar, sour cream, lemon juice, and vanilla extract and beat until there are no lumps.
  7. After 10-15 minutes, remove the crust from the freezer.
  8. Pour the cheesecake mixture over the crust.
  9. Pop the cheesecake back into the fridge for at least 12 hours.
  10. To serve, cut it into slices and serve with your choice of toppings.

2. 3-Ingredient Fudge

If your heart starts pumping like crazy every time you’re having fudge, you would be even more excited when you realise how easy it is to make homemade fudge! With just three easily accessible ingredients, satisfying your monthly fix of deliciously rich chocolate fudge has been made extra simple.

Preparation Time: 10 minutes

Ingredients:

2 cups of dark chocolate chips

2 cans of sweetened condensed milk

1 teaspoon of vanilla extract

Steps:

  1. Line a 9×9 square pan with parchment paper. Make sure to cover all the sides of the pan.
  2. Place the chocolate chips and sweetened condensed milk in a large bowl.
  3. Melt it over medium heat on a double boiler.
  4. Take it off the heat and stir in the vanilla extract.
  5. Transfer the mixture onto the square pan and let it cool to room temperature.
  6. Refrigerate it for 2 hours.
  7. When serving, cut the fudge into square pieces to enjoy!

3. Panna Cotta

Ingredients: 

3/4 cup of milk

3/4 cup of heavy whipping cream

1 packet of plain gelatin

1/3 cup of caster sugar

1/2 teaspoon of vanilla extract

1 teaspoon of butter

Steps:

  1. Place the milk and cream in a small pot and sprinkle the gelatin over the surface.
  2. Heat the mixture on a low heat whilst whisking until the gelatin dissolves.
  3. Whisk in the sugar until dissolved.
  4. Turn off the heat and add the vanilla extract.
  5. Grease 4 mason jars using the butter.
  6. Pour the mixture into the mason jars.
  7. Refrigerate for about 2 hours to let the panna cotta set.

4. Pineapple Sorbet Popsicles

Ingredients:

450g of frozen pineapple

2 tablespoons of sugar or honey

Steps:

  1. Blend the pineapple and sugar in a food processor or blender until thoroughly combined.
  2. Pour the mixture into the moulds and place the popsicle sticks.
  3. Freeze for at least 2 hours, to set.

5. Oreo Truffles

Great for kids and adults, these Oreo truffles put a spin on the classic cookie in a fresh approach! Similar to a cake pop, these truffles are enriched with that tangy cream cheese that balances the sweetness in this dessert. Appealing to all ages, this is yet another recipe you’d want to jot down for safe-keeping.

Preparation Time: 10 minutes

Ingredients:

1 packet of Oreos

1 cup of cream cheese, softened

A pinch of kosher salt

1 cup of semisweet chocolate chips

 Steps:

  1. Blend the Oreo cookies in a food processor until you have fine crumbs.
  2. Set aside two tablespoons of the crushed Oreos in a separate bowl.
  3. Mix the cream cheese, salt and Oreo crumbs till well combined.
  4. Line a tray with parchment paper.

Ingredients:

3 cups of whole strawberries, rinsed

2 cups of Vodka

1 1/2 cups of semisweet chocolate chips

2 teaspoons of butter

 Steps:

  1. Wash the strawberries and pat dry.
  2. In a bowl combine the strawberries and vodka and refrigerate for 1 hour.
  3. In another bowl combine the semisweet chocolate chips with the butter.
  4. Melt the chocolate mixture over a double boiler and stir till well combined.
  5. Line a tray with parchment paper.
  6. Drain the vodka and individually pick out the strawberries.
  7. Dip it into the chocolate and place on the parchment paper.
  8. After that, refrigerate for another hour or till the chocolate has set.
